The Easiest Lasagna you will EVER Make


This past Saturday Alyssa and I successfully fulfilled our goal of running the 5K downtown!  It was so exciting being in the atmosphere of it all (even though the marathon and half marathon were on Sunday and we were on the same day as the kids race...) But we fulfilled our goal, so onto the next one!  I'm looking into half marathons--Lyss you in??

I have received so many suggestions for delicious meals from everyone!  I appreciate all the feedback and wonderful suggestions.  They will definitely find their way into the blog :)

So in between working, selling our house, working out, and just the everyday tasks of life, I have been crunched for time in making dinners.  Especially on those nights when no one is going to be home at the same time!  So I have found a few easy (yet delicious) recipes that will save you time that you can now spend doing other things.  Now first things first.  If you do not own a crockpot stop everything you are doing get in your car and buy one. They are God's gift to easy cooking! You can find them for about 30 dollars at target so there is no excuse to not have one.

OK, so everyone has a crockpot now right? PERFECT!  We can now start making the easiest recipes for those days you just don't have time!

This is a fantastic blog to follow!  This is what essentially gave me the idea to start my own blog, and I wanted to name my blog "The Girl who ate the World" but my sister Jane made fun of me for it so I decided against it. (I still think its catchy)

Ingredients:

-1 pound ground beef (or ground turkey)
-1/2 cup diced white onion
-1 teaspoon minced garlic
-1 jar spaghetti sauce
-1/2 cup of water
-1 (15 oz) container of ricotta cheese
-2 cups mozzarella cheese
- Fresh spinach
-1/4 cup grated Parmesan cheese
-1 egg
-2 tablespoons fresh (or dried) parsley
-2 teaspoons basil
-Salt and pepper to taste
-garlic powder
-8 uncooked lasagna noodles

This is seriously so easy to make, I usually go home and make it during my lunch hour....and still have time to spare!  I like to use ground turkey and choose the cheese's that are low in fat.  Every little bit counts!

To start, brown your ground beef or turkey and onion.  Add in your garlic as well.  Season with salt, pepper, and a little bit of garlic powder.

While this is cooking I start making my cheese mixture.  Mix together ricotta, mozzarella, parmesan, egg, parsely, and basil.

When your meat is cooked through, drain the excess water.  Add in the jar of sauce and water.  Let simmer for 5 minutes.

Start the first layer in the crockpot with about a cup of the sauce, followed by a layer of noodles.  Then add half of your cheese mixture on top.  Add a layer of spinach.

Cover with two cups of the sauce, the remainder of the noodles, the remainder of the cheese, and another layer of spinach.  Top with the rest of the meat sauce.

Cook on LOW for about 4 hours (noodles will be soft) top with the remaining mozzarella cheese, and let that melt.

I recommend adding a bit more sauce heated on the side, to make it saucier!
